How to Fix Sour or Bitter Pour-over Coffee
Taste first, name the problem precisely, and make the smallest useful change. Most disappointing cups become easier to fix when strength and extraction stop being treated as the same thing.

Sour coffee usually needs a little more extraction. Bitter, harsh, or drying coffee often needs a little less—or a more even extraction. That is a useful first guess, not a law. The bean, roast, water, strength, and temperature at which you taste the cup can all change what you perceive.
Taste again when the cup is cooler
Do not diagnose a pour-over from the first very hot sip. Serving temperature changes how strongly we perceive attributes including sourness, bitterness, and roasted flavors. Controlled sensory work across serving temperatures found meaningful differences as brewed coffee cooled, so tasting the same cup at several temperatures gives you better evidence than immediately changing the recipe.
Wait until the cup is comfortable to drink. Take a sip, wait another few minutes, and take another. A coffee that seemed generically “strong” when hot may become clearly fruity, roasty, hollow, or drying as it cools.
Sour is not the same as bright
Pleasant acidity can resemble citrus, berries, or crisp fruit and usually sits alongside sweetness. Problematic sourness feels sharp, empty, or abrupt. It may leave the cup tasting unfinished rather than lively.
Bitterness also has context. Dark chocolate, cocoa, and gentle roast bitterness can belong in a balanced cup. The useful warning signs are bitterness that overwhelms everything else, a burnt character, or a dry and rough finish that lingers after swallowing.
Before touching the grinder, finish this sentence as specifically as you can: “This coffee tastes ___ and feels ___.” Sharp and thin suggests a different move from heavy and dry.
Separate strength from extraction
Strength is how concentrated the drink is. Extraction describes how much material the water removed from the grounds. They interact, but they are not interchangeable. Research mapping drip coffee across different strengths and extraction yields found that sensory attributes depended strongly on both—not on a single ladder from sour to bitter.

These are starting hypotheses. Your next cup is the test.
If the coffee is sour and thin
A slightly finer grind is the cleanest first adjustment. Smaller particles expose more surface area and usually slow the drawdown, giving the water more opportunity to extract soluble material. Move only one or two small grinder steps; a large jump can replace a thin sour cup with a clogged, drying one.
Also watch the bloom. Dry pockets are easy to miss when fresh coffee releases gas. Pour enough water to wet the entire bed, then give the brewer a gentle swirl rather than aggressive stirring. The SCA’s two-cup pour-over example uses 50g of bloom water for 22g of coffee and waits 30 seconds before continuing—a useful reference point, not a universal command.
If a finer grind does not help, try one secondary change: slightly hotter water, a little more contact time, or more total brew water. Change only one, then taste again. A controlled drip-coffee study found little direct sensory effect from brewing at 87°C, 90°C, or 93°C when strength and extraction were held constant. In practice, temperature matters largely because it helps determine the extraction you achieve.
If the coffee is bitter, harsh, or drying
Try a slightly coarser grind first. If the brew also drains very slowly, that is an especially useful clue. Keep your ratio stable so you can tell whether the grind change helped.
Next, simplify the pouring. Repeated hard pours, stirring, or vigorous swirling can move fines into the filter and contribute to a slow, uneven brew. Aim to wet the bed evenly, keep the stream controlled, and use only as much agitation as the recipe needs.
For a dark roast, cooler water can be a reasonable later experiment when roast character is already prominent. Do not treat temperature as the automatic first fix for every bitter cup, however. If changing temperature also changes extraction, you have changed more than the number on the kettle.
When it tastes sour and bitter at once
When sour and bitter notes appear together, treat unevenness as a hypothesis to test rather than a diagnosis. Some grounds may receive abundant fresh water while dry pockets or fast channels leave others behind. Before grinding finer, check whether the bed is being wetted and drained consistently.
Check the basic mechanics:
- Is the coffee bed level before the first pour?
- Does the bloom wet all the grounds?
- Is the kettle stream reaching the whole bed without repeatedly washing the filter wall?
- Are you pouring gently enough to avoid carving a deep channel?
- Is the drawdown much slower than previous brews with the same coffee?
Use a gentle bloom swirl if needed, then make the rest of the pours calmer and more consistent.
A baseline that makes troubleshooting easier
- Choose one ratioStart with 15g coffee and 240g water, or another dose at 1:16. Keep it fixed while dialing in.
- Use a repeatable bloomWet all the grounds with roughly two to three times the coffee dose, then wait 30 to 45 seconds.
- Keep the pours simpleUse the same number of pours and similar timing on each attempt. Consistency is more useful than choreography.
- Taste at two temperaturesWrite one flavor word and one texture word when warm, then repeat when cooler.
- Change one variableStart with grind size. Give the new setting a full brew before changing water temperature, ratio, or agitation.
Total brew time is evidence, not a target you must obey. The SCA reference recipe places a 22g/400g brew between roughly 2:30 and 3:00, but brewer geometry, grinder, filter, coffee, and dose all change flow. Compare time against your own previous brews rather than rejecting a good-tasting cup because the clock says 3:20.
Know when the recipe is not the problem
Some coffees are naturally more acidic; darker roasts can carry more roast bitterness. Stale coffee may taste flat regardless of careful pouring, and strongly chlorinated or unusually mineralized water can obscure the cup. If several sensible grind changes produce the same unpleasant result, try the coffee brewed by another method or with different water before rebuilding the entire recipe.
The goal is not to remove all acidity or bitterness. It is to make enough room for sweetness, aroma, and a finish you enjoy. Keep the process boring enough to learn from: taste, make one small change, and brew again.
